But, to me, that’s fun, you know it’s interesting. It’s something to talk about. Nacho truly, is the Japanese cheese? It’s a vegan version of a you know, really complex umami rich, like washed rind, cheese and yeah. Many cheese lovers really enjoy natto and see that that parallel in the flavor profile, it’s a food that I feel like more people need to have access to, because I think it can benefit a lot of people by incorporating it into their diets hi.

My name is ana anat ani, i’m the founder and owner of nurture food, which makes natto in brooklyn new york natto is, is really a ubiquitous food and everyday food. That’s most commonly eaten for breakfast. Yes, I feel, like I have sort of taken on the mission of being a cheerleader, a spokesperson, an evangelist for natto in the in America, and it really is because I I truly believe that natto is just so special, so unique.

I think, if there’s any food on earth that deserves to be called a superfood, it’s not Oh in a weird way: I’m I’m an urban farmer, an urban microbe farmer, I grow bacteria and those bacteria eat soybeans and they help me produce natto yeah, I’m a nerd! So this is day one of nature’s natto making process every bath starts with this step, which is me hand sorting through the beans about the process and our beans are beautiful and fantastic.

I like to think that every single nacho being we sell, has passed underneath my eyes, I’m a microbiologist actually and that’s how I got into this business just being fascinated by by the by the power of of the microbial world. And so you know I’m interested in how consuming some of these good bacteria, these probiotics types of bacteria, in the form of fermented foods, how that impacts, human health, our first products, so those little white nuts are actually chemically pure umami taste.

I mean there’s documentation like written documentation describing natto for over a thousand years in the West and in America it’s virtually unknown. It makes me think that if more adults would come to natto with just an open minds, a lot more of them might find that they actually like it. This might be excessive, but I readed them ten times. You know soak them, agitate them and then dump out the water, and then they sit in the bath overnight are able to of to hydrate.

So they will swell to over twice twice the weight and volume. When I first learned how to make not two from a fifth generation not to maker in Tokyo, he told me that the most important step was to choose the best bean you could to start with, and he was right. The best nachos soybeans in America are grown in the northern Midwest, mostly in North Dakota, and something that a lot of people don’t realize is that most of the natto that’s made in the world ie the natto that’s made and sold in Japan is actually most of It is made from u.

S. Grown soy and the bulk of that also from North Dakota. Specifically, so we also have black soybeans and then another brown bean which is certified organic natto soybeans, are are very different from the typical commodity soybean. Thus they’re non-gmo sort of by definition, but soybeans that are used to make nacho by any decent automaker our really beans that have been selected carefully selected over generations to be ideal.

For this particular fermentation process. What makes nurture natto unique our natto is fresh. It’s never been frozen, unlike all all the natto that is imported from Japan is frozen before export and that’s important one because you know freezing and thawing foods can really affect its taste and its texture. But two if people are motivated by eating natto for its health benefits, freezing and thawing also significantly damages those health benefits as well.

Oh is it got some sugar to it? It has at least three completely unique properties that are, unlike any other food on earth. Okay, number one: it’s probiotic right: it’s fermented with bacillus subtlest, which is a member of the healthy gut microbiome. So it’s a probiotic bacteria that isn’t found in any other fermented foods, certainly in the West. So a second one is that natto is the most concentrated food source of vitamin k2 of any food on earth and it beats any other by an order of magnitude, and so vitamin k2 is essential for for bone health.

But it’s also very important for cardiovascular health. It doesn’t matter how much calcium you eat if you don’t have enough vitamin k2 to help recruit it out of your bloodstream and bring it to your bones. It accumulates and causes arterial calcification and leads to heart disease. The third reason is that there’s an enzyme named after natto, it’s called natto kinase, and this enzyme is a natural blood thinner.

It has an enzymatic activity which actually has been shown to be capable of breaking down blood clots and the only natural source of it is natto. Well, there are some cardiologists, actually you who are starting to promote. Not to so you know, we’re really hoping to work with health, healthcare providers to educate them and hel them educate their patients. Whether your reason is the vitamin k2 or the natto kinase content or or the probiotics.

You know why not at least give it a try and eat the food which is one delicious. I think cheaper than taking a pill and three you get all three of these benefits at once. Many Japanese people have told me that our natto is the most delicious. Not toe that they’ve ever had either here or even in Japan, which is great to hear. I’ve also gone to the National nacho competition in Japan and met many natto producers from Japan and also gotten really high praise from natto producers in Japan.

I think this favorite moment of mine in the entire you know week-long process of making the nacho is that moment like after the fermentation is complete when I get to just pull back the film on on a fresh tray of nacho and just see that Nevernever stickiness, Those spiderwebs sort of coming off the off the beans and sort of the the the more resistance I have from those strings, the better. I know the fermentation is the better than natto, so it’s also sort of a quality control assessment at the same time, but I love that feeling of like the the biofilm resisting my pull so yeah.

We really look at this as as a long game we’re at the very beginning of it right now, but you know I I suspect it may take ten years, maybe twenty years or not so to become known enough for people to recognize it as a thing as A food so it’ll take a while and a lot of Education and exposure like this to just spread the word or logo. Many people comment on our logo. It’s actually a mathematical function, it’s a Fermont spiral or a parabolic spiral, and I loved it because the center of it kind of looks like a yin-yang symbol and to me it represents the two ingredients and our food, the soybeans and the probiotic bacteria.

It’s sort of coming together and synergizing and making something better, bigger, more beautiful than the two components alone.



African staples gets an upgrade to Superfoods

What are African superfoods the super, because they’re rich in multi vitamins, antioxidants and everything else to keep your body fit and healthy. Some have even taken superfoods to a new level. Today we talk to Antonio de Luca at the leafy greens, cafe and she’s, going to take you through a gastronomic taste sensation, so superfoods. The idea of superfoods is that they are foods that are highest.

In particular, nutrient density of an entire group of foods. Moringa grows on a tree in southern Africa. It’s a really small little leaf. The leaf is dried at low temperatures, usually in the Sun, then it’s crushed up or or put into a for earn a form. That’s very fine like a powder and then that Moringa can be added to your smoothies and things which we are going to do today, but Moringa would be the highest in certain vitamins or minerals in the net food category.

Let’s talk a little bit about Bayer babe. These little white, almost dried pups inside and what we do is we take that powder into a nice fine powder form and that baobab is very, very high in calcium. In fact, it’s got three or four times the amount of calcium than that milk cacao chocolate in its purest purest raw organic form is a definite superfood and yes, chocolate is good for you. This has been known to be more valuable than gold in ancient cultures.

So a wonderful, wonderful, superfood then kale kale is is a green, a dark, leafy green vegetable somewhere between spinach and cabbage, quite christopher’s, quite quite a hearty vegetable down in a blender which we are going to do today in our smoothie or it can be cut into Really small pieces or torn into tiny little pieces and then, in fact, massaged with a little bit of citrus to break down that cellulose and kale is extremely extremely high in iron and protein vitamin K all different vitamins.

It’s such a wonderful, wonderful superfood. We all know spinach, wonderful, dark, green leafy vegetable and also can be used in the smoothies. We also add that to our green juices and obviously – and we know how to cook cook spinach and use that then tamarind is also another wonderful superfood tamarind is a pod and you use it in recipes to get that. Amami, flavor and tamarind is wonderful. To add to you too dressings and it can be added to smoothies, but a beautiful, beautiful super food in hibiscus.

Hibiscus is a flower just behind me here. I’ve got a beautiful, hibiscus, iced tea, which we’ve done for our customers. Today, we’ve added a little bit of honey, a little bit of lemon, and these wonderful, beautiful, hibiscus flowers and hibiscus is very high in resveratrol and resveratrol is known to for longevity and to increase one’s shelf life and beautiful, beautiful super food. So smoothies are so wonderful because you get fiber because you’re going to you’ll see we were using the kale and the spinach and so there’s a lot of fiber in the smoothies, which is good for cattle and for digestion and that, but it’s blended.

So it’s in a predigested form, so the body can really utilize all of those wonderful vitamins and minerals that you’re going to be getting from the smoothie, especially when you’re adding all these wonderful superfoods. So let’s put a few pieces of frozen banana in there, but I’m going to put a few pieces of pineapple. It’s a lovely little blender jug, then to sweeten today I’m going to use dates.

These are also grown in southern Africa. They come from a little bit further up, I think northern northern province, then i’m going to take the kale. This is curly kale. This is black kale cavalo Nero and I’m just going to take it off the stem. It’s not vital, but it’s it’s better for for the taste of the smoothie in case you don’t blend that whole stem smooth. So I’m just going to put those leaves right in there.

Then I’m going to take a little bit of the spinach and do the same thing take off that mean main stem, then I’ve got this bear bear powder, looks like a white powder. So again that was very high in calcium, I’m just going to put about a teaspoon and a half in there. Then we’ve got the cacao powder, so this is going to be a bit of a chocolatey drink. So let’s not hold back on the chocolate. Let’s do to keep two teaspoons of the chocolate.

Then we’ve got the Moringa. We don’t want to overdo the Moringa. We only want about a half a teaspoon of the Moringa because it does have direct effects. If you have too much – and we don’t want that today – then we’ve got some almonds – you can use any raw nuts or seeds as a little bit of a fat in your smoothie. So our almonds have been sprouted. What I mean by that is the almonds: have been soaked in water overnight, just to release the enzyme inhibitors that the nuts have inside of them and then they’ve been dried again in a dehydrator at low temperatures, to retain the enzymes so and to activate the enzyme.

So I’m going to put about a tablespoon and a half of almonds in there, then I am going to put a little bit of Mesquite. I haven’t spoken about Mosquitia, either mosquitoes white carob and that also grows in South Africa. Okay, so now I’ve got everything in my blender jug. I do need a little bit of liquid, but look how beautiful that looks. So I’m going to add a little bit of our hibiscus tea, just to get the blender jug going for a minute or so so here we have it a beautiful chocolatey, superfood, smoothie, wonderful way to start your morning very cleansing protein, rich mineral, rich and just totally Delicious variety of the leafy green restaurant.

Your Brain Is NOT In Your Head (Doctor Explains)

That that’s ridiculous. But in fact, with each passing year and with more and more research we’re beginning to realize that we have two brains, and years ago there was a quite a popular book called the second brain which detailed the fact that there are more neurons.

The cell of the nervous system lining your gut. Then there are in the entire spinal cord, which connects the brain to all the rest of you. So the phrase was coined the second brain, but in fact I’m going to make an argument in the upcoming book. The longevity paradox, then, in fact, your brain up in your head should properly be called your second brain and that your first brain should be properly called your gut.

Now that’s a pretty bold statement, but with the previous lecture we talked about the fact that around 90 % of the cells that make you you are living in your gut and that 99 % of all the genetic material in you is contained in your gut. In your skin, not human cells, and that most likely we have uploaded information processing to our gut for most of the functions that we need to do now when I was in medical school and even up until a few years ago, we knew that we thought that A lot of the hormones that affect our mood among others serotonin and affect our sleep of melatonin.

Initially we thought they were made in the brain, but then subsequent research showed that they we thought that they were made in the neurons in the gut and then sent to the brain. Well now it’s clear that most of the hormones within us are actually made in the gut themselves by bacteria, and if we have the time we’ll talk about one of the amazing effects that roundup glyphosate has had on poisoning our first brain, and I think that has Huge implications on the rates of anxiety and depression that we currently have in in our country and other Western countries, okay.

So the basic concept of how the brain talked to the gut was that there was a very large nerve called the vagus nerve that ran from the the brain down to the heart down to lungs, down the liver and then down to the gut. The intestines and the brain via the vagus nerve would basically tell the gut what to do. It would control the motion of these smooth muscles that don’t otherwise take orders via nerves.

So it’s basically the old idea of cable wiring, your home or even electrical wires or telephone wires, there’s literally a direct electrical signal that goes now. This is actually a fairly fast signal, as anybody who hits a hot plate or a hot fire, you get an instant burning sensation that goes to your spinal cord, actually never gets to your brain and you immediately pull your hand away. So that goes by a cable.

What we were taught is that this is this was primarily a one-way street brain told the gut. What to do now, as I mentioned before, women are much smarter than this, and they long known that the gut tells the brain what to do with a gut sense. And of course, you were right for every one wire going down from the brain. There’s actually nine wires going up from the gut to the brain, and this was one of the first indications that perhaps we had it all wrong as to who was in charge.

And so this is one of the first indications that probably the first, our first brain. Our real brain is down below, and this is an important but second brain now, there’s this cable system or hardwired and whenever I’m doing a podcast or a radio show they always want me to be on a ground or ground link. It cellphones are fairly unreliable, but we have a cellphone system. So the second way that we communicate information is via hormones and hormones, don’t travel via wires.

They travel via, if you will blood vessels or limps or there’s even a suggestion that they travel along meridians of electrical charges. But let’s just say that so the second message is Tech’s missing and they serve and and emails. So this is a believe it or not slower process than the hardwire and it’s more subject to misinterpretation, because you have to have a tower or a cell phone. That is capable of getting a good signal.

And if you remember anything, we talked about how lectins may disrupt signaling is that lectins, among other things, will bind on to a cell’s receptor for a hormone and just stay there and block a hormone such as insulin just giving an example from actually getting the information That it needs to get to a cell, and so both of these systems are very important. We used to think that most of the hormones that we make are made in the gut primarily some in the brain, and they were made probably by specialised hormone, using cells.

But with each passing year as we’re beginning to understand how elaborate the gut population is. The more we’re realizing that it’s actually the bugs in our gut that are responsible for making many of the hormones that communicate to our brain so, rather than a kind of top-down information system of the brain being in control of us. It’s actually at least equal between the gut and the brain, and I think, in terms of our short-term and long-term health, that both the first brain down in the gut is probably the big winner in long term.

I’ll give you an example. I recently was visited by a very famous meditator from Japan, a woman who is actually Deepak Chopra’s a representative in Japan, and she actually translates all his books and she has suffered from severe juvenile rheumatoid arthritis and autoimmune condition. And she it’s so bad that she was on to immunosuppressants. She’d already had two knee replacements for her severe arthritis and she had such incredible pain that she really moved around with the help of a wheelchair and a walker, and she firmly believed that she could meditate her way.

Out of this condition – and I think that’s very admirable – but clearly it wasn’t working – she also followed a ru Vedic diet with large amounts of brown, rice and legumes as her principal diet, and she took all the usual suspects. She took lots of anti-inflammatories like tumeric and to no avail, and apparently she was in Vancouver Canada last December, when an acquaintance handed her the plant paradox and she took it home and read it, and I met her in April of this year when she flew to Meet me beautiful young woman, she walked into my office.

She was on no medications, she was pain free and what had happened well as much as her second brain tried to overpower what was happening down in her gut. This was actually the problem and don’t get me wrong meditation and actually works extremely well for a lot of things, but meditation has yet to break into this first brains barrier and so when, when this brain is out of whack, the consequences are severe across her and She’s just one example: let me give you a better example.

We talked there was a question on the last time about good, bugs and bad bugs. So we know that there’s there’s about 10,000 different species of bacteria, so far identified in our gut and there’s probably well over a million different viruses that live in our gut and a nice smattering of worms and fungi and we’re just beginning to figure out what all These guys do we can classify them generally as good guys and bad guys, and you know that I call the good guys gut buddies and the bad guys gang members and the gang members have different food requirements of the good guys and, what’s so fascinating about the Gang members – and this has been worked out very well in animal models and there’s a couple human models that we can talk about.

So the gang members, love, sugars, simple sugars and they love saturated fats, love them. The good guys can’t live on this, and what we now know is that the gang members send text messages up to your brain to your hunger, centers and the text, messages basically say: you’re hungry, we want more to eat and we actually want more of the things We eat and we want more sugar and we want more saturated fats and those of you have seen Little Shop of Horrors, the movie or the play.

The movie had Rick Moranis in it and an all-star cast. But the blood sucking plant that poor Rick Moranis had to take care of, wanted human blood and her name was Audrey and Audrey constantly got bigger and bigger and needed more and more blood, and she constantly said feed me. Seymour feed me and poor Seymour had to go out and get her what she wanted. So we now know that the bugs in your gut, actually tell you to feed them now.

The converse is true: we know that the good bugs actually want these complex, sugars resistant starches in Ulan, which is a complex sugar, and they actually, if you give them what they want over a few weeks time, they will actually kind of drive out the gang members And they’ll start sending messages to your brain to feed them what they want, and I have so many men who are meat and potatoes guys that would never think of even having a salad within two or three weeks.

Maybe a month they’ll they’ll come in and see me so doc. This is the weirdest thing I crave salads. I can’t go a date without having a salad. That’s really weird, really weird! Well, it is really weird to think that this brain has more control over what you’re actually seeking you’re, actually seeking foods for whoever is control of this brain, and this brain in turn controls this brain and there’s been some beautiful experiments with germ-free mice, where they’ve taken Germ-Free mice, who don’t have any bugs in their gut and they give them feces from fat rats.

You know the nice thing about working with rats and mice as they love to eat each other’s feces. I have a dog, we won’t go into them and they just love it. So you don’t have to give them enemas, fecal enemas, you just give them the other rat species, so they take the skinny mice who are, and you give them the feces from obese mice. And lo and behold, the skinny mice will become obese, and this is actually in the Lance that a few years ago there was a case report of a woman marathon runner, who I mentioned in the plant paradox who was skinny.

She developed the severe intestinal infection called C, difficile or C diff, which is the ultimate gang member and she got it by getting a lot of antibiotics and it killed off all her good bugs and the gang member took over. So one of the ways we treat that now is a fecal transplant and a fecal transplant is exactly what it sounds like we take feces from healthy volunteers. I was actually one in medical school back in the dark ages at Georgia, where we actually use fecal transplants to cure this problem and once a week they would take around a honey bucket.

We called it and medical students would take a crap in it and then we’d put it in a Waring blender or a Vitamix and modernize it, and then we put it in a bag and shoot it up. One of our patients rear ends. So that’s a fecal transplant, so it’s now actually recognized therapy. So this woman in England had a fecal transplant. We like to try to get a close relative, because it turns out that people who live together share their same microbiome so, and it turns out one of the theories of why fat families are fat is that you all share the same obese, microbiome and skinny.

Families are skinny because you share skinny microbiome and it’s not willpower as it’s you’ve, you’re being controlled. So this woman marathon runner gets fecal transplant. It’s cured of C difficile from a nice. Now her niece was about thirty pounds overweight within a year. The marathon runner, despite returning to marathon running gained 30 pounds, ate exactly the same foods that she did before, because she’s a healthy runner well how’d.

She do all that. Well, it turns out there’s another really interesting twist to the son, and we talk about a lot in the plant paradox. The obese mice are obese, not only because they have bugs that make them seek out other food, but the bad bugs are actually very efficient at extracting food from the things you swallow and, sadly, they’re actually very efficient at passing it on to you. In other words, they’re the gateway, and so even though this marathon runner was eating pretty much the same thing and believe it or not were not.

The skinny mice were being fed the same rat chow that they were getting before they were given the obese mice bacteria. They all gained weight because these bugs were very efficient extracting calories, but then passing it into things that we could have soared now. What’s really interesting is the good guys they actually, if you will, or rather greedy and don’t want to share, and so they take the foods that we give them.

Particularly inulin and Ola go saccharides and they do two things with it. They make more bugs more kids and they make a particular kind of fad that are called short chain fatty acids that are called and the most important one is sorry butyrate now butyrate gets its name from butter or butter gets its name from butyrate. There’s a little bit of butyrate in butter. Now, don’t turn off the set and go running for the kitchen and get some hot buttered popcorn, there’s very little butyrate in butter.

But there’s some there and one of my colleagues has become famous for bulletproof coffee, which has butter in it, and that’s why it’s in there anyhow butyrate it turns out, is the primary fuel for neurons and, more importantly, it’s the primary fuel for the mitochondria. In all of our cells, but in particular in neuro and you’ll, see that the more butyrate producing bugs you have the better, your health and the better, your brain and the better your energy levels, because of what the mitochondria are getting okay.

So these guys take everything you eat, make some butyrate in exchange, oh by the way butyrate. If you listen to the last lecture is essential for the cells that line our gut has their main fuel supply and the more butyrate they get the plumper and healthier and happier they are and the better off you are long-term, the bugs the additional bugs come out. Your rear end, and then you have Terry walls looking down at that giant, coiled snake in her toilet, so they took most of the food you ate and made more of them.

So it’s a win-win. They give you, in exchange this incredible, clean burning fuel source that helps plump up. Your gut makes your brain happy, make sure mitochondria work and they take most of everything and make more bugs and you poop them out, and you stay thin and again. That’s why you could have someone like me, who you know lost 70 pounds doing this or Kelly Clarkson who lost 37 and a half pounds without exercising and people say, that’s a miracle how’d you do that.

Well, she got rid of her gang members by starving them to death. The good guys moved in they ate most of what she swallowed and in return they gave her what she needed to go on, and so what we see with most people is that the weight loss is basically a side effect of getting your gut back into order And it’s a side effect you don’t have to. This is not about deprivation. This is not about. Oh, you know, I’ve got to have willpower.

Will power comes from here? The willpower you want actually comes from here when you’ve got text messages from your good bugs saying you know feed me the stuff I want and the bad bugs are no longer giving you information to seek out the stuff that they want. Okay, now as most of it, so let me actually so good took good time to talk about glyphosate or roundup. Roundup is now ubiquitous in all Americans.

All North Americans, roundup, used to be most people have heard of roundup, is what we spray on our weeds in the garden. The yard, but roundup was originally developed for GMO. Soybeans and roundup is an herbicide. It kills plants, and it does so by blocking a hilarious pathway, called the Shikha mate pathway and it allows plant cells to divide and reproduce it. Humans do not use the Shikha mate pathway, and so, when Monsanto invented roundup, they assured us that roundup was perfectly safe, because we don’t have the sugar make pathway to make cells.

What they didn’t tell us is that bacteria use the sugar made pathway to reproduce, and so roundup initially was sprayed on soybeans subsequently was sprayed on corn canola and sugar beets. Now roundup is sprayed on almost all conventional grain crops as a harvesting agent, and I won’t bore you with details, but it’s much easier to harvest corn or soybeans or wheat or rice or canola. If the plants already dead makes it far easier to separate the seed from the plant, so now roundup is sprayed on conventional crops so that these very expensive harvesters can be at a particular field on a particular day when the crop is dead now, so this is Then so now roundup is on all of these products, its then fed to our animals as fee.

Now nobody goes around with each individual kernel wipes off the roundup. It goes into the animals. It then becomes part of the meat, whether it’s a chicken, whether it’s pork, whether it’s beef, it’s now part of the beef, then it also goes into our feet. It goes into all of our cereal products, all of our bread products, all of our soybean products. It goes into almost everything we goes into all of our corn products, and so we are, it goes into our wine.

Almost all California, wines have glyphosate, including a few of our organic wines, because the fields next to the organic fields were sprayed with glyphosate. In fact, I was talking to Hawaiian maker in Santa Barbara County a couple months ago and we were looking at their biodynamic and organic and was look. We were looking at one map of his field and I said well now how about this one? He said. No, we can’t certify it as Ganic and biodynamic, even though we treat it that way, and I said well, why not? He said one could see this parcel in here at this bar, so they they spray.

You know with with Roundup, and so we know the wind drifts it and we won’t sort of point certified. So what happens now is roundup in almost everything we eat number one kills our microbiome period. Now we now know from some new research from MIT that roundup, in and of itself breaks tight junctions, which we learned about on the last lecture or what separates the outside world in our gut from us, so roundup in itself produces leaky gut.

But what’s worse, is these gut bacteria are essential to take the building blocks of serotonin and melatonin the serotonin, the feel-good hormone melatonin, the chill-out hormone and take those essential building blocks away, and so the gut bugs are gone. They no longer have the building blocks, so they can’t make serotonin and they can’t make melatonin. Now there’s a third compound that some people have heard of called GABA now, gaba, there’s two hormones, the excitatory hormone, which is dopamine.

Anybody who is addicted to a article game is looking for a dopamine charge. Any gambler is looking for a dopamine hit, gaba is the calm down or mo it tells things. The nurse chill out. Gaba we now know, is also made primarily by gut bugs. So is it any wonder that we’ve got an entire multiple generations least two generations of anxiety, depression on edge and and nothing really and nobody can sleep and it’s all because we’ve we were systematically destroy.

This frame is okay so far, but then the next problem happens. Okay, so neurons make connections with other neurons, their social network to exchange information, and they send out all these dendritic processes. I got to stand over here doing it so there’s neurons are so important that they have their own handlers, their own bodyguards and they’re called glial cells or microglial cells and they’re part of the immune system.

They’re, their white blood cells, so they’re specialized, might think of it as the secret service. These guys are so important that they they kind of care from the neuron and they protect them. Okay, so that’s great now, if our gut is leaky or if lectins and LPS’s are getting. If you remember, we’ve got a bunch of neurons down here and we also have our border patrol where most of our immune system is, and the Border Patrol’s job is to alert.

You me our rest of our immune system about a pending attack. So when lectins and LPS’s and bacteria get through our gut wall, helped by roundup text, messages which are called inflammatory, cytokines hormones are sent up to the brain and they say: oh, my gosh, you know we’re down here in the hinterlands. The walls been breached. The hordes are coming protect the neurons at all costs, so we now have some very elegant pictures, particularly from Harvard MIT instead and UCSF, where these defenders of neurons turn into pac-man and they actually eat these dendrites and prune them back, and you can think of it.

As pulling back the troops from the front lines, I like to think of it as pulling up the drawbridge over a moat as the you know, the barbarians are storming the castle, and so they can actually finally get the neuron isolated and then they get so good That they encircle the neuron to protect it and the neuron, just like you, pulled up the drawbridge on the castle. If the Horde surrounds the castle waits them out, the inhabitants will starve because they don’t have anything to eat and what we’re seeing now in dementia and Parkinson’s and Alzheimer’s, is these clusters of dead, neurons surrounded by their bodyguards? Now in Parkinson’s, it has a name.

It’s called a Lewy body and this is a characteristic finding of Parkinson’s disease. You know these Lewy bodies occur in a part of the brain. I love this word, the substantial nigra, it’s just a great word and that’s the motor control area of the brain and that’s where all the dopamine cells in the brain are and so the substantial nigra. We see all these Lewy bodies and, oh by the way. Besides text messages, we know that lectins climb the vagus nerve up to the brain and attack the head in head for the substantia nigra.

This has been proven in animal studies, but it’s also been proven in humans, where a number of humans used to have an ulcer operation where we cut their vagus nerve to cure their alter, and it worked pretty well actually. But these people have been followed for years and years and years and people who have had their vagus nerve have about a forty to fifty percent less chance of having Parkinson’s than people who don’t have their vagus nerve, interesting, okay, so, finally, tying it all back together.

So Lewy bodies are the hallmark of Parkinson’s, dead, neurons, surrounded by goji, berries, goji, berries, glial cells, Kouji berries, you evil got that in so researchers neurologists were wondering why Parkinson’s patients had bad constipation, they do and they said well. It must be because the vagus nerve doesn’t tell the gut to move right well, they did some animal experience and said you know we should look at the neurons in the gut because there’s lots of neurons and they got in there and control the movement.

So they started doing biopsies in animals with a model of Parkinson’s and lo and bold down here in the gut, were the dead, neurons, surrounded by glial cells, Lewy bodies, they’re down here in the gut, what the heck are they doing down there they’re supposed to be Up there, so then they took early Parkinson’s patients and do what are now called trance. Colonic biopsies, where you take a colonoscope and lots of people have had a biopsy of a polyp, but they go all the way through the wall of the Cole and bite off.

Some tissue just beyond and lo and behold in human guts of early, Parkinson’s, there’s the Lewy bodies. So what we now know is that Parkinson’s begins in your first brain in your gut and then that information is communicated to your second brain, that the war is on and protect the troops up here. So the more we learn about the first brain, the more and this important brain gets relegated. So, lastly, Alzheimer’s everybody knows about amyloid plaque.

It turns out that amyloid plaque doesn’t start in the brain. Guess where it comes from. Amoy comes from the gut and it goes to the brain. So the reason we’re having this epidemic of dementia of anxiety and depression and sleeplessness, it’s all, because our first brain has been destroyed and under assault, and our second brain is suffering for it. Kale: Superfood or super bad for you? | Dr. Gundry Clips

Sucking you think kale is unhealthy for us to eat, but it might be a bit of an overstatement. But I like you, I really care about the microbiome and I spent 15 years of my life on antibiotics for chronic sinus infections. So I had a truly rack to gut that is now recovered and along the way I got to be friends and I’m an investor.

An advisor in a company called biome that quantifies gut bacteria at a very detailed level, and their data set from tens of thousands of people shows that roughly a third of people don’t have bacteria that can breakdown oxalic, acid or oxalates. So what happens? Is this compound? That’s very high in kale. Oh, it goes into the blood. It meets, free, calcium there, an extra calcium. As you know, ages, you pretty quickly.

You should not have extra calcium floating around your blood, but you probably do and when it hits the calcium, it forms micro crystals that then stick in your joints and cause pain. It’s associated with brain inflammation, potentially with autism and the worst condition of all that it’s associated with is called vulvodynia, which is extremely a painful vulva in women to the point they can’t even wear underwear.

I mean it look, really bad pain and it’s caused by these micro crystals. So if you’re sitting there eating one of these, you know raw kale salads once or twice a day. Well, I’ve actually seen a couple of women who have come to me for hypothyroidism and they basically were having a kale smoothie in the morning and kale salad for lunch and a kale salad for dinner, and it was actually suppressing their thyroid function. They didn’t have Hashimoto’s thyroiditis, they thought they have, but we took their what we didn’t take it away from them, but we dramatically limited their kale and it solved the problem yeah.

If you have some kale once a week and you don’t wake up with joint pain. Great you know enjoy it, I would say: eat the Dino kale, that’s stuff, that isn’t all lacy. The lacy kale is particularly high in these compounds and there’s something else really scary about kale there’s a toxic metal called thallium. It’s called the poisoners poison. It disrupts potassium in ourselves, kale even organic kale bioaccumulates that stuff, like nothing else.

When we put, we took lead out of our gasoline, we put thallium in the gasoline instead, which is a thousand times more toxic than lead, which itself any amount of lead in. Your body increases your risk of cardiovascular disease dramatically. So now we’re eating a food that has oxalic acid and high thallium levels, which disrupts cellular metabolism and we’re thinking we’re making ourselves healthy.

So look if you love kale eat some kale, but you can also eat some french fries they’re, probably equivalent



Superfood Fudge

Three pieces left, that’s an emergency, so we have to make some more. What does it consist of? Well six ingredients. I believe. First, you have the coconut oil that we use right there, real good stuff. I’r going to take this already scoop. Some out have a frying pan. Here, I’m going to go! Stick this on the stove. You don’t have to look this way I’ll! Just stick it here to about medium heat.

You just want it to this one: it’s a liquify! You don’t want it getting hot! You want to bring it to a really high temperature, because it’ll hurt the lot of nutritional benefits in these other things. We’re going to use another thing we use is pure vanilla extract. Okay. This is a brand that we like and works pretty good. Then you need peanut butter, which is not mild. Salsa, like I showed in the other thing there we make our own peanut butter, just got done, making some here with our Vitamix blender.

It’s an older Vitamix blender. These are really expensive brand new, but you can find them on eBay, for you know 200 dollars or less many times and a lot of money. But again you can make your own food with it. It’s really good to have around. Why? Wouldn’t you want to buy store-bought peanut butter, well hydrogenated oils in the peanut butter a lot of times they’re made with genetic engineering the peanuts and things they’ll have natural, flavors they’ll put high-fructose corn syrup in it.

They put a lot of junk in the you know. In the peanut butter at the store with this, all you got to do. Is you just basically get a thing of peanuts, make sure it doesn’t say partially approves with genetic engineering or whatever else on it with the ingredients, but you just get some regular peanuts. These are slightly salted, the sea, salt, so not a big deal, salted or unsalted pour them in your Vitamix blender blend it up and we always like to blend it kind of into a smooth consistency right there.

You can see like that, and what you need, then, is you need a cup of this, so we’ll get back that here in just a minute. I’ll show you these other ingredients, keep an eye on my coconut oil over there. The other thing that you need is some raw honey. Okay, now I haven’t really discussed a whole lot about the raw honey thing and the benefits of raw honey. It needs to be local to your area. Okay, I’m not going to ship this to somebody in Texas.

Why well because the bees will pollinate flowers in your area and it will actually give you kind of an immunity to allergies to the pollen and things in the springtime. I heard that a couple years back, it was about two years ago. Actually, three years ago, three Springs ago that would be – and I was having terrible allergy problems – could not work outside. It was just sounds of sneezing nose, running and my eyes were just itching so bad.

It was really really really bad outside. I heard a thing about raw honey can actually help with allergies, and so I started taking some and my allergies. Pretty much went away, it’s amazing, but it was local raw, honey, very important. The next year, which had been this past spring. I started having some allergy problems again. I thought raw honey started, taking some same thing so, two years in a row, I proved it.

It definitely does work, but this is very another. This is kind of sweetener within the superfood fudge, really really good stuff. There’s when I say superfood, another thing that I need to clarify hair is, when I say a superfood, I think it’s ten categories. It has to be really good in, in other words, very high in magnesium, vitamin C or potassium or whatever um kale. A lot of people say: kale is a superfood.

Kale is not a superfood, God didn’t create. Kale kale is a genetic hybrid, alright created by man. Kale is not a superfood. Alright, mostly you will have superfoods coming from the tropics or from very very cold northern environments. The plants will get, you know a lot of energy from both. In other words, they will get very they’ll, be very, very strong in a northern environment. Cuz have to survive this big winter or they’ll get a lot of sunlight and a lot of rain.

You know like a greenhouse condition in the tropical environment, which brings me to the next. Essentially, this isn’t really tropical, but because Peru is not really tropical per se up or the East grow in the mountains really high altitude, but maca root again. Another organic superfood. Just off the charts with all the different nutrients in it and everything else again, I was really skeptical about some of the stuff years ago.

I heard about this thing of superfoods I just kind of and whatever it will. You will feel the difference when you start to incorporate super foods into your diet. It’s it will hit on so many different levels. Again, a lot of people make the mistake of with natural health they’ll hear that echinacea will help to boost your immune system. So if you get a cold take some echinacea, so they get a cold and they go and get a Nick and hu pill and they think this is going to help me.

You know it’s an herbal thing and I can just take an echinacea pill. Then they say: oh, it didn’t really work. What you need to do. The way you fight disease is to prevent disease from in the first place. You don’t need a bunch of junk food and then say give me a cure when I get sick. No, no! It’s about prevention, and how do you prevent things? Well, remember a very simple little saying you are what you eat.

Okay, there was another guy said the one time you know: let food be your medicine, alright, um you just stay in good nutrition. You have good nutrition in your life, you’re not going to get sick, and if you do get sick, it’s going to be about 24 hours and you’re going to be done with it. I can. I can tell you I used to get sick for weeks. At a time with a flu or cold or whatever else, and if I had a fever, it be days on end or whatever else.

Now, it’s extremely rare for me to ever be sick for more than 24 hours, usually it’s less than 12 hours. They don’t get something and and what I do when I get sick I’ll, just start eating all kinds of superfoods and whatever else and it’ll usually defeat whatever I’m dealing with, but this is yellow maca root I’ll be right back. Let me just check my coconut oil yeah do not want to let it get hot because, like I said it can kill some of the nutrition and other things there.

But there you go. There’s your liquefied coconut oil we’ll get back to that in just a minute. I’ll show you some other types of maca root really quickly. We have there’s basically three different types you have yellow, which we showed earlier. There’s your yellow. You have red maca root and then you also have black maca root. Okay, these three right here we have an opening yet because we’re trying to get rid of the trying to use up get rid of a but trying to use up the yellow that we have here and so, but there there’s so much with what superfoods again.

I could probably going to bring out another study, but another really really amazing. Superfood is this right here. This is the basis for chocolate raw cacao. Okay, this is organic cacao. We go through a lot of it, so we got a big bag. That’s not cheap stuff. Okay, again, we’re not talking about the cheapest way to make a meal here, we’re talking about healthy eating and healthy living stuff that will actually change your health that will actually make you feel really really good and not just oh, that was a nice meal.

It tasted nice, oh you got to get by the thing of I mean the taste natural healthy eating is extremely flavorful, very, very, very good. It’s not old if it tastes bad, it has to be good for you. That is nonsense. Okay, um rabbit trailing here. A little bit, but it’s important for me to say this: the reason that commercial foods with a lot of preservatives in them the reason they taste good, is because of excitotoxin that they put in there aspartame natural flavors, high fructose corn syrup.

It’s deceiving your mind into thinking that they taste good and when you eat natural food for years, if you back and try to eat that stuff, it will taste like chemicals to you. Okay, I cannot. I cannot drink soda pop. I cannot eat junk food anymore. It just tastes like toxic chemicals to me and believe me, for over thirty years I lived on that junk food. Okay, I really wrecked my health, important distinction.

This is racquel. This is, it says, 100 % cacao. I don’t trust this, it’s probably genetically engineered. Whatever else. Don’t don’t buy this thinking? Oh wow, I got your cow. It’s not the same thing right very important to understand that, but one of the big things that cacao will do for you is it’s it’s the highest source of magnesium in the world. So if you have joint pain, if you have muscle pain whatever else, this will pretty much take it away.

This is also very good on headaches as well. I might have an inflammation and inflammation yeah a couple times. I’ve actually been starting to get a headache, and I start to take some of the fudge here and the headaches gone. Okay and again it’s a process. Natural health is a process. The first time I started trying natural health. It wasn’t just boom my body’s back to healthy, whatever it takes a little while and till the most powerful super foods on magnesium that you can, you know, take together and it’s tremendous cacao and choc arute, both extremely high in magnesium, both really pair up together, cacao, Tea with superfood fudge is extremely good together.

Let me tell you so without any further ado: let’s get to the recipe, let’s start out here, I’ll have to get another spin right. First of all, you want to have four heaping tablespoons of cacao powder there. We have one just want to put the glass bowl or, like that’s a mixing or measuring cup kind of a thing there, one two three and four: this is not a if you haven’t noticed. This is not a extremely exact science.

If you get just a little bit, you know a quarter, teaspoon too much, then you’re going to blow something up or whatever else. It’s not a big deal, and then what I do is I do about a tablespoon mockery as well. Maca root is also really good for women, the balancing hormones and things like that really good stuff, and this gives it kind of a little bit of a hazelnut type of flavor, so the two of them really good to mix together so that what we do you Want a teaspoon of vanilla so for a teaspoon of vanilla extract in okay.

Now we need four tablespoons of raw honey. Okay, there’s one to three and one more just kind of let it drain off a little bit there and for there you have it. Okay, take your finger and just kind of clean it off there. I’r hands are clean. I washed them last week, so they’re still clean, I’m just kidding. That’s a joke. There probably be an exposed article coming out now, hmm, but you never know alright.

Okay, now we’re going to actually you know what I’ll do the peanut butter first try to get this stuff out of here and of course, the you know, a lot of people say we make peanut butter and then you got to add maple syrup and you got To add whatever else to try and make it taste good or whatever they you know just you know, learn to eat things, just as they are you’ll appreciate it more. You got it.

You got to retrain your taste buds when you first get off of all the sugar junk and you know you’re you’re, basically, a drug addict. If you’re used to a lot of white sugar and again you know, I’m speaking from experience here and they’re still. You know temptations come up in things to eat, junk food and whatever, and – and thankfully I don’t give in to those – because I know every time I have in the past – I always end up getting sick or you get the sugar high and then the sugar low And and your insulin levels of crashing – and you know it just this – doesn’t – doesn’t pay to mess with sugar.

So now we’re going to fill the rest of this. You can see how runny it is when it’s blended, really fine like that. Okay, there we go all right, get all this stuff out of here, see they’re, just scrape it all out with a spatula, and we eat this stuff a lot, because it’s got quite a few superfoods in it and incredibly good for you, and you really just feel Good after you’re done eating it, it’s not the same thing as a store-bought candy or anything like that.

Now. What we need to do is we need to pour 1 cup of coconut oil into here. Hopefully I made enough. Sometimes I don’t looks like about perfect Wow. Great job good praise, Lord yep, for the coconut oil in there, like I said you don’t want to make it too hot or anything and scrape it in there. Okay, now we take if you have a pie pan or whatever else or an old cake pan. We have this heart-shaped cake, pan cake pan.

So what we’ll do here is we’ll stir. It stir this up real good, so it’s all mixed together. Then we come in here and look in there and see how it’s cane stirred again, you don’t need an electric mixer in a blender and all that other junk. You know I mean, if you put it in the Vitamix. Well, it’s just going to make it more stuff to clean up. It actually started together pretty quickly this dirt. Will you don’t have any limbs or anything get a little bit of exercise here, even justify eating a few more pieces of fudge? Great? Actually, it’s not bad! For you, so you can eat a couple pieces.

Just don’t do like our son did the first time he tried that he had eight pieces and ended up, throwing up a little bit later. Do all things in moderation. Okay, there you go it’s about what you want right there, but no it isn’t never mind is either lumps that’s about what you want all those big cliffs, Amaka or uh cacao. No, it’s not. I had it. It’s character, make sure you get on the bottom and everything move around on the sides.

You know it’s not really a big deal if you do get some clumps in there, because you know you’re just going to be in any ways, but the Cal does not taste like chocolate by the way it has a slight chocolaty flavor, but it’s kind of bitter. So but if you add some all hunting to it and coconut oil and vanilla extract and peanut butter and everything tastes real good, so there we go. That should do it for that.

I’ll just put this over here later on, find a volunteer to lick that off government grant. First, probably you should okay. Now what you can do is what we like to do is if you kind of like some peanuts in it, which I showed you you know see. If I can show one here, you can see the peanuts in it there in that piece of fudge. Okay, I’ll eat that one later, if that’s what you want, then what you do excuse me: you pour some peanuts in right into the fudge as many as you want there you go, you can also put some almonds in it.

We have some almonds up there. Another thing which we’ve tried is here’s some raisins, okay kind of give you the chocolate-covered raisin taste, not bad, it’s. Okay. Another thing is dried cranberries. I, like dried cranberries in the fudge certain somebody doesn’t care for it as much, but stop picking on me terrible, but dried cranberries and my opinion are pretty good and the thing another option might be.

These are called golden berries. Okay, golden berries are another superfood they’re, not one of the highest ranked superfoods or whatever, but they’re some really good stuff in their tropical type of berry. Douji berries would be another option, that’s another, her food. The whole point is here to get as many super foods into your diet, even something that you would consider a dessert. You want to get super foods into your diet on a regular basis, because it’s going to give you nutrition on so many different levels and it’s going to boost your immune system and it’s going to help you out a lot of stuff again.

Another point I need to make is that I believe that the body is self-healing itself, regenerating. Okay, God designed us, the Bible says we were fearfully and wonderfully made, and I believe that there are things out in nature that can actually regenerate damage that you’ve done to your body. Again, I was in really poor shape. In my you know: teens 20s 30s. Really poor shape because of just being raised on on sugar and um.

You know my lower back went to a chiropractor at one time he told me. My discs in my lower back were degenerating, a terrible back pain and there’s a lot of different reasons. For that not going to get into it, but just from you know, longing primarily lifting heavy things and whatever else and I used to have you know I just I couldn’t stand up for very long, because it was just such bad back pain and one of the Big things I did is introduced magnesium into my diet and I very little pain anymore, so just try to get as many superfoods in your and your body into your system as possible.

It’ll really help you alright, so now just pour it right in there. I know it’s tempting to say just skip the freezer part and we’ll just go right to just take a bowl and pour some in and eat it with a spoon. But you know patients, it’s worth it yeah all right, just use your spatula to get as much of that out of there. As you can again, you might have to find a volunteer putting that in the paper or something for somebody that’d be willing to lick this stuff off.

I won’t say any names here, but and then what you do is my secret terrible. What you want to do, then, is I’ll. Stick it the freezer. It’s nice level area right there we go and let it go for two or three hours and it’ll be done. So we’ll see you back a little bit and for this is frozen. Okay, it’s been a few hours. The superfood fudge should be done, it’s let’s check in the freezer and grab it got it, and here we have it.

Look this way that pretty cold, but there you can see it on the frozen nicely. Then you can cut it into pieces or you can actually, if you have a cake pan like this, you can actually just pop the whole thing out like this see how easy it comes out. I’r just kidding you like that and you can go and turn your computer on and read some King James article ministries, sermons and just spend the whole night just eating chocolate.

Probably not, I don’t think that’d be considered moderation, so it might get a little messy on the computer too yeah. You know. After a while, it would start to kind of warm up a little bit you’d kind of get a little bit messy. So but there you have it, there’s your superfood fudge real healthy for you not very difficult to make, and I really highly recommend it. That’s going to be it. Thank you for reading you



5 Gundry-Approved Vegetarian Superfoods

Gundry, I’m a vegetarian. What can I eat? You know I hear it all the time. People assume that the plant paradox is not for them because they don’t eat meat. Now, here’s the thing. If you’ve read my book, you know that every recipe has a vegetarian or vegan friendly option. In fact, I eat mostly vegetarian diet myself, but I don’t fill up on grains and I don’t get my protein from soy. Instead, I rely on five vegetarian superfoods that are plant paradox approved and delicious.

The first one is an avocado and it’s one of my favorite foods. In fact, I eat an avocado just about every day. In fact, it’s the one fruit you don’t have to eat. In moderation, it’s got barely any sugar and the perfect blend of healthy fats and soluble fiber to keep your gut bugs happy and with almost as much protein as an egg avocados do a great job keeping you full. That’s why I tell my patients to start each day with a whole avocado.

Second, we’ve got leafy greens dark, leafy greens like spinach, kale and collard greens are among the healthiest foods on the planet and believe it or not. They’ve got plenty of protein think about it. Some of the biggest most muscular mammals on the planet – horses and gorillas, for example, eat vegetarian diets and they’re getting enough protein and nutrients to go about their days. That’s because they know they can get all the protein they need from Lees.

And so can you third mushrooms, they’re high in protein as far as vegetables are concerned, but that’s not the only reason they’re great for keeping your body fueled up you see. Mushrooms are heavy in fructooligosaccharides a form of indigestible sugar that your gut bugs love and there’s no better way to keep you full happy and comfortable and keeping your gut bugs happy. That’s part of the reason I love corn grumbles as a replacement for me.

They’re vegetarian made mostly of mushroom roots and have a great meaty texture up next nuts. Now not all nuts are created equal. In fact, some nuts aren’t nuts at all their seeds like cashews or legumes like peanuts, but walnuts, pecans, pistachios and macadamia. Nuts are all wonderful for you, they’re, packed with good fats or filling and are high in protein, and studies have even shown that people who eat nuts every day live longer healthier lives than those who don’t.

But what about almonds their skins contain lectins. So if you’re eating, blanch or marcona almonds, you’re fine, the plain old almonds should be avoided. Last but not least, beans. Yes, you heard me right beans, the doctor Gundry, don’t beans have lectins absolutely, but there’s a great way around that pressure cooking. It kills. Almost all the lectins and beans making them safer to eat and don’t worry modern pressure cookers aren’t the scary spring loaded, ready to blow contraptions of the past, they’re safe and easy to use, and you only hit one button.

But if you want even easier shop for eating brand, can beans they’re, already pressure cooked to minimize lectins and they come in a bpa-free, can just remember pressure cooking doesn’t get rid of all electrons in your food, so save beans, even pressure cook beans for special occasions And always remember: you can get plenty of protein from plants, especially things like greens, cruciferous, vegetables, roots and tubers.
