Mexican Bean Salad Sweetened With Date Paste | Rockin Robin Cooks

This is a no cooking type of recipe, we’re going to be using canned beans and we’re going to be cutting up some fresh vegetables to put into it. And I tell you: this is the first article that I’ve shot since going into a shelter-in-place, and so we’re going to be using things that we already have using a produce and things that I have. We really shouldn’t be out there shopping in crowds and stuff.

So hopefully you won’t either use what you have improvise when you need to okay, I’m rockin Robin and I’m going to show you how to make this delicious bean salad right after this before we get into our recipe, go ahead and hit that subscribe button and a Notification bell so you’ll be notified every week when my new articles come out. I don’t want you to miss them because we’re always cooking up something delicious and healthy.

Alright, let’s go over the ingredients. First, up we’re going to use a couple of cans of beans, raising canned beans because well it’s just easier right and during this pandemic – and we want to make this easy and I’m sure, you’ve probably got some beans in your cupboard. So I’m using kidney beans and white beans and I’ve drained them and I’ve rinsed them all so neat, I’m going to use some corn I’m using some organic corn.

Here now I’ve chopped up a few vegetables. We’ve got some chopped up tomato. That’s just what I happened to have and then I did the superfine dice here on some red onion, some celery and some red bell, pepper, and I also have some pumpkin seeds that we’re going to add to this for a nice little crunch. Now for our dressing ingredients, this is the important part we have some balsamic, vinegar, apple, cider, vinegar, olive oil, I’m using some fresh herbs that I happen to still have in my fridge, which are some parsley and some organic fresh basil.

I love to add basil to my recipes. It’s just a wonderful herb to use now. I’ve also got some fresh lemon juice, lime juice, some salt, garlic powder. In this container I have some ground cumin, some ground coriander and some chili powder. Now, for my sweetener, you we have to balance out all this acid, so we have to add some sort of sweetener. Now I don’t like to use regular sugar, so I like to use if some of you’ve been reading.

My articles, you know I like date, paste. It’s a wonderful sweetener, lots of vitamins and minerals and fiber. It’s just a it’s a good way to go it’s low on the glycemic index, so it works and it’s easy to make, and I have a article for you if you want to learn how to make it. But I can tell you it’s very simple and very quick boil up some dates that are pitted in just some water and then you just simmer it for 20 minutes pop it in the blender.

Add a little of that liquid back until you make a nice paste like what we have here and you’ve got a great sweetener, that’ll store in the fridge for about a week. If you don’t have date paste or you want to use something else, you can try. My next choice would be maple syrup that works really well too, but in the end, use what you have so that you can try out this delicious salad. So we’re going to start off by making our dressing we’re going to take some olive oil and we’re going to place it into a bowl now with this recipe.

Ideally, what we want to do is make the dressing and then marinate just the beans in it overnight. That would be the the best way to do this recipe, because what happens is the flavors meld into the beans and it just gets really good. Some recipes are like that: they’re always better the next day, but if we put all the vegetables in then they tend to get a little bit on the more soft side and that might not you know you may not like that.

So if you can do it go ahead and marinate the beans overnight, if you can only do it for an hour, that’s okay, too. It all works. So here we go with our apple cider vinegar. Now our balsamic we’re just going to add a little bit of balsamic to this next we’re going to add our salt to this sprinkle that in and you can always adjust these seasonings. If you like garlic powder, those spices that I showed you ground, cumin, coriander and chili powder start stirring it a little bit now add the lemon juice and the lime juice, and now, for our sweetener.

I’m only going to add part of this. I have three about three tablespoons worth and I don’t know if I want to use it all until I taste it so we’re going to put some of that in there now and then we’re going to chop up with some of our fresh herbs that parsley in The basil toss that in and we’ll just give that a whisk I’m going to give that a taste and see if we need to adjust into the seasonings I’m going to go with a little more salt and I’m going to add a little bit more chili powder.

Let me give it a little splash for just a little bit of heat, just a hint and I’m going to go ahead and I’m going to place this into our beans and then we’re just going to let that sit for a little bit and then we’ll add The rest of our stuff, all right. Let’s pour that dressing right in there and get everything in there and we’re going to let that marinate for about a half an hour. At least I’m going to give this a toss and we’ll come back in a bit and add all the rest of the ingredients.

It’s been about a half an hour, I’m going to add the rest of my ingredients to this. So we’ll start with the celery toss that in I like to use that superfine dice, because everything mixes in so nicely and you don’t get big chunks of it and I just think it tastes better and I’m going to do some onions. I don’t know if I’m going to do all of this, but we’re going to do a good portion of it now, keep in mind when you refrigerate this, let’s say you’re going to serve it the next day, for example, you want to take this out of the Refrigerator about it half an hour to an hour before you’re actually going to have people eat it right, because when you use olive oil and you refrigerate it, it tends to get hard and get kind of gel like so you want to let that thaw out a Little bit and come up to room temperature, here’s our bell, peppers, nice, all those in there right now.

Let’s add some yellow, I’m going to add some of this corn, I’m probably not going to add it all and we’ve got our Tomatoes toss. Those in last thing. We have are some pumpkin seeds, which just add a little crunch. You can use any nuts that you like, and here you go guys. This is the finished product all right, I’m going to serve just a little bit up here, so I can take a taste very delicious guys, nice and refreshing.

We’ve got the crunch of the fresh bell peppers and the celery, the onions, all those flavors coming together. Very fresh tasting and very it has just the right amount of balance. I think between citrus – and you know the acidic part and the sweet part. I think it’s delicious so hope you guys give this a try all right. That’s our recipe for today. I hope you enjoyed it. Acai Smoothie – Start Your Day Packed With Nutrition With A Healthy Smoothie

I drink this a lot and I tell you I’m using frozen blueberries and some acai berries, that’s our main flavor and we’re using lots of other things. I’m going to show you in a minute, but it is just creamy and decadent and delicious.

So I’m rockin Robin and I’m going to show you how to make it right after this, so before we get into the recipe go ahead and hit that subscribe button and the notification bell next to it and that way you’ll be notified. Every week with my new articles come out and we’re always cooking up something delicious and healthy. So here’s what we need for our power smoothie. I have a packet of a cyi puree, which I got it Trader Joe’s.

We need some organic frozen blueberries. I got those at Costco a couple of bananas, I peel them and then toss them in the freezer and freeze them make sure smoothie, nice and creamy. I have some raw pumpkin seeds, raw walnuts. I have some hemp hearts date paste or you can use just regular hold dates. If you have a high speed blender, I have a piece of avocado I’m going to toss in there. It makes this for some good fats.

I have coconut milk with its full fat as well, and I have some almond beverage here that is unsweetened alright, so with the acai packet you’re going to want to hurry up and use this before it melts break it up into pieces because it just makes it Easier for the blender, so I take it out hon to my back porch and I just crack it over the concrete back there and it breaks it up into nice pieces. So you want to just you can see it just kind of breaks up into some pieces, and it’s alright, so I saw is really good for you.

It’s got a lot of antioxidants, a little bit messy here, lots of fiber it just lots of good nutrition and I’m using the of course. The frozen organic blueberries toss. Those in mexico’s my frozen bananas you can put in as much as you want. They make the smoothie nice and creamy now feel free to improvise. Here you can add whatever you want to add to this thing, it’s really simple, but this combination of things works really.

Well, I take a small handful of a saw, hump concedes, and I just I just throw in a few. You can certainly use other nuts. All these would work too. I just like the walnuts just throw in a little handful of that. You get a lot a lot of protein. In this hand, parts I’ve got serving of that which is like 3 tablespoons. Now here’s the date paste. I have just a little bit left on it to make some more I’m just about out.

I have a article that I’ll show you how to make this I’ll leave the link in the description of the article click down there, where it says, show more. So I just throw in a you know: just I’m going to put all this in actually and you can vary it now. If you don’t want to do the date paste, you can throw in some dates. I got mine from Costco and they’re pitted and you can just if you have a high speed blender, you can just toss the whole thing in there and it will.

You know pulverize it. Now. I have some leftover avocado here and I’m going to toss that in for the good fats, and this also makes your smoothie super creamy. Here’s my I have some leftover coconut milk. This is full fat and then the almond milk is just to get the right consistency. So I’m guessing here I put in maybe a third of a cup of the coconut milk, and I’m just going to pour some of this in what I think you need, and it all depends on how frozen all of your fruit was too and then we’ll place.

It on to our blender blend away all right. I want you to have a look at this thick and creamy so happen to have one of these little straw things instead of using paper straws this one’s just kind of you see how that worked. Just kind of came together and it’s reusable of course, and washable, and all of that, and so I’m going to stick it in there and take a taste man that is one delicious smoothie.

It is creamy and just decadent I mean it just satisfies it. Tastes like a milkshake, but it’s got a lot of nutrition and you can cut back on the sugar even more by leaving the dates or the date paste out and just go solely with the blueberry sweetness and the banana and you’re good. So that’s up to you and feel free to mix and match and add things to this and do whatever you want. I stick with the acai and the blueberry is my base flavor.

But what would go really good with this cocoa powder right get some really good. Cocoa powder put in a tablespoon and now you’ve really enhance the flavor of the acai because it sort of tastes like that anyway. A Weird Way To Cook PUMPKIN SEEDS!!

Is it her long, hair good morning, guys? Okay, so we are adult aday and grace is in her car seat and Austin’s going to be in his car and I’m going to be in this car and we were driving to get our oil change. Hopefully, in both cars and we’re hoping it’s not going to be like a huge weight, if not, we might have to mess around walmart for a long time and just see we can get into you, huh pissed, off no babe.

Are we getting chipotle on the way gluten-free? Oh yeah, Mary kept guys, we dropped off Austin’s car at walmart to get the oil changed. This is the one that needs it works. So it’s like an hour and treatments. Is that what they said, yeah yeah, it’s like an hour 20 minute way. You said we’re like you know what let’s not to mind today, maybe when we get back, if we have time or when we go back in, we feel like we still need to do.

Some things we can see him how long it will take so we’re at ok, baby she’s, cheap me, but the other one is this week. I am so hungry and jaboulet sounds so good right now. What I could eat, but grace is asleep. So we’re going to let her sleep a little bit longer because she was not happy to be in the car. You know she was very angry. She was even crying. She was like yeah we’re getting ready to go in just want to update you guys and we always go to walmart to change our oil.

I know some people are like that seems really dumb, because you can just change your own oil. It’s not that we don’t understand how to change your oil or anything like that, but with my car – and I don’t know specifically yours and what was at the normal price – hmm yeah. So it’s sixteen dollars, you guys for 1669 or something like that to change your oil at walmart, which is cheaper than if you buy the filter, the oil and just those things it’s cheaper to just go and get it done.

Have someone else do it? So that’s what we just have someone else to it. So yeah, it’s just a lot cheaper and that way you don’t have to do it yourself. You just drive your car to walmart and then you shop at walmart. Well, your change. We just got our food guys. We’re going to eat really quick, I am so hungry. It looks so good. You want to eat baby to my son. We made it. Oh, yes, we get driving on the way home and we stopped and picked up some stuff at walmart, which we actually have to go through and play, but um yeah.

It was interesting. We, like I said we didn’t get my car down, but we got austin’s to car done, so that was the one that we really needed to do either way we got something done and walmart sucks for food. We were supposed to get especially that one yeah. I trust you that one wasn’t like a supercenter whatever, and so we were supposed to get like a lot more groceries and we got like not even a fourth of what we needed.

It was like just random stuff. Basically, mommy said, I’m sorry, hey one, two one. Two three I’m exhausted, though you guys we have not been getting enough sleep. We have been staying up way too late and just huh there’s not yet enough sleep, but ones update you guys, really quick on how the working out has been um. I’m definitely still doing it. I am definitely still gluten free um going on. I have no clue how many days, but I have yet to have any gluten on purpose that I’ve been aware of, for hey.

Did you guys know of since I started so lot of time? So it’s like a week and a half I think now or something like that. May I help you miss, but yeah, so it has been going good on the gluten part, but I just had this such a lack of sleep that my ability to actually work out has gone down. I’m sure I could still do it, but I just I’m just so tired. I don’t have very much motivation. I don’t know if it’s my eating habits that have changed that or not getting enough food or something I don’t know, but I am still working out, but not like every single day like I was, and I don’t plan to stop working out no matter what I Want to continue what i’m doing, but it has been.

I think, two days since I worked out last and then like I was doing like at least every other day before that and then a lot of times. I would be like two days in a row skip one two days in a row skip one kind of thing, so it’s not bad. I mean i’m still definitely working out doing the same exact routine that I shared with you guys on Twitter. I’m really really just trying to figure out what is best for me in my body and what can make me feel better because I’ve just been struggling with this just this type of deal for far too long, and i’m just i’m ready to start feeling better and Getting healthy and everything alright guys, so we just finished up dinner.

I’m trying to get cleaned up awesome just went down really quick just for a minute. Where was all over you, but grace is currently over here, playing in the pots and pans having a good old time mm-hmm and I am making the pumpkin seeds. So I don’t know the actual way that you’re really supposed to do these. But this is like super good, the way that I’ve done it. This is me that my dad’s always done it, but basically I just have this on medium to medium.

Highish really don’t want to come too fast north of come to slow. That’s the tricky part! You don’t be too mean like hard and all that we do in the movies crispy. So I put a bunch of butter in there and then like a little bit of oil just to help make them crispy, and then you just spread them this way. There’s the final guys Oh runaway baby mm-hmm, but I overcooked him a little bit on one side. So that stinks, but they still taste okay and then they take a lot of salt and then I also put a napkin underneath because they’re super greasy with the way.

I cook to them, and I’m sure, there’s many actual wastes and my recipes to do this, but this is just how I do it and is really good this way. Hey. You know myself, what’s good, thank you big yeah. I think they’re going to crispy mm-hmm right. I, like them, crispy all right, hey, I feel like today’s vlog is everywhere. I don’t feel like. We did very good today with flogging what I really was hoping to blog, so I hope it doesn’t suck, but i’m going to go ahead and end today’s vlog with a snap, because I do have one from a very special viewer.

Let’s see here and it is Casey Blanton and she is so sweet and she’s actually one of the frequent people that sends me snaps and I love it so much. How To Cook Eastern NC BBQ | Pulled Pork

Today we will be making some Eastern North Carolina barbecue we’re going to be cooking a pork butt on the pit barrel cooker all right guys. We’Ve got a seven pound pork butt here. I’Ve already done some trimming. Some extra fat it was mature skin I like to cut that off and leave a little bit out of it. So it’ll render down really well now again, what I was saying was we’re going to be cooking, this Eastern North Carolina style, but I’m going to put a little bit of a twist on it.

My buddy at heaven I made products Michael Petrie, suggested a couple of layers, so we’re going to be using some of his product today and first of all like what I like to start off with. Is some olive oil we’re going to rub this all around, and this is a bone-in pork butt and for the ones who are not familiar with this and reason why they call it a pork butt? It is not from the actual pigs, but it is from the shoulder.

What we’re going to start off with? Is it’s incredible? By having a product? That’S going to be our first layer and I did score some of the fat like I said I trimmed it off, but I did score it some and we’re just going to kind of Pat this in I don’t. I don’t rub it in. I just kind of Pat it. Okay, now that it’s incredible is just kind of a typical salt and pepper. It does have some garlic in it. So what the twist is for this is we’re going to be using this amazing Cajun as our second later.

So that’s going to be our twist to this Eastern North Carolina barbecue, so we’ll put this on. This will be our next layer. This is going to give us some some really nice, color and nice bark. All right. We’Ve got the pork butt seasoned up really well. So now we’re going to get started on the pit barrel cooker hang tight with us guys, our guys just to kind of walk you through over, though we filled out this charcoal basket and we take in 40 briquettes and we’re going to get those ready all right.

We’Re getting those four kids ready to roll and a recent article kind of introduced, the Mojo bricks to you guys and we’re going to be using today a maple and apple wood mixture. This stuff is great guys, just a little couple little blocks and you get some awesome flavor, so we’re going to be using this today. So once these coals get up the temp we’ll get started right overhead and put these hot coals in here.

Okay, now we’re going to add our mojo bricks, put our great in we’re going to be cooking this on the wait about 20 minutes, and then we will get this pork butt all. Are we going to put this on and we’re putting that fat side down a little bit of fat? We had leftover and put our grill eye in there. Take this part right here, rebar back in and let it go around 165 all right, guys we’re going to check it out and kind of see where at it will be a right around 160 yeah when that 165, that’s kind of thickest part right there yeah! You want to go ahead and wrap this up all right guys.

What we’re going to do today is I’ve never tried this before, but we’re going wrap it in some pink butcher paper and I’m going to spray it with a little apple juice. First back on here, let it on we’ll be up around to 205. Alright, let’s! Let’S do a thing and blue be back guys, we’re going to check this right, quick and see where we are. The grill grill is reading right at 200, I’ve already kind of poked.

It a couple times and we’re right where we need to be we’re kind of 200 205 there. So we’re going to hair, wrap this and some fall and put it in a cooler. Alright, let’s wrap it in this. For I quick this way get real tight. Put it in a cooler, let it rest all right, guys, here’s how it turned out. It’S really tender we’re going to start today by some with the sauce range it out really. Also, let me try this right great great guys pretty soon to keep an eye out I’ll have another article out with some recipe for this sauce super easy to do.
